How to Make Sunrise Tater Tot Casserole
- While the oven is preheating to 350˚F, you'll prepare the casserole layers. First, crumble and cook the sausage in a cast iron skillet or another oven-safe skillet until no longer pink. Blot any excess grease with a paper towel.
- Sauté the diced peppers and whites of the green onion with the sausage until tender. This should take about 3 minutes.
- Turn off the heat, and add ¾ of the tomatoes on top in an even layer followed by 1 ½ cups of the shredded cheese.
- In a large bowl, whisk together eggs, milk, salt, and pepper. Pour the mixture evenly into the skillet.
- Arrange the frozen tater tots over the egg mixture in concentric circles, starting with a row along the edge of the pan and working your way in.
- Bake for 35-40 minutes or until the eggs have fully set and the cheese has melted. Sprinkle the remaining cheese on top and bake 5 more minutes.
- Cool 5 minutes before serving to give time for the casserole to set. Garnish as you'd like.

- Sunrise tater tot casserole can also be made with turkey breakfast sausage, smoked sausage, ground Italian sausage, or plant-based ground sausage.
- You can substitute whole eggs with egg whites.
- You can substitute the cheddar cheese with any of your favorite cheeses! Colby jack, pepper jack, and Monterey jack are some of our other favorites with this casserole.
- The tater tots should be frozen when baked to avoid overcooking.

Storage
- Once cooked and then completely cooled, this casserole can be stored in an air-tight container in the refrigerator for up to 4 days.
- Like many casseroles, this one can be frozen, thawed, and reheated as well. After it's cooked and completely cooled, either store it in an air-tight container or wrap it securely with cling wrap followed by aluminum foil. Thaw overnight in the refrigerator before reheating. It can be frozen for up to 2 months.

Ingredients
- 1 lb ground breakfast sausage
- ½ cup diced bell peppers
- 3 sliced green onions green and white sections divided

- 2 cups shredded cheddar cheese divided

- ½ teaspoon black pepper
- 28 oz tater tots

Instructions
- Preheat the oven to 350˚F.
- In a 12-inch cast iron skillet or oven-safe pan, crumble and cook sausage until no longer pink. Discard excess grease. Add peppers and the whites of the green onions, and sauté until tender, about 3 minutes.
- Turn off the heat, and add ¾ of the tomatoes on top in an even layer. Sprinkle 1 ½ cups of the shredded cheese on top.
- In a large mixing bowl, whisk together eggs, milk, salt and pepper. Pour evenly in the skillet. Arrange the frozen Tater Tots over the egg mixture in concentric circles, starting with a row along the edge of the pan and working your way in.
