I'm excited you're going to make it! 🙂 Yes, you can half it and bake in an 8x8 or 9x9. The cook time will be nearly the same, but you could use a meat thermometer 10 minutes less than the time calls for to make sure. I hope y'all love it!

That's a great idea to lessen the sodium. I do the same as well when choosing ingredients...always picking lower sodium if available or lowering the seasoning content.

I have made this dish several times since you shared it with us. It is so easy to make and your instructions easy to follow. I just made this 2 nights ago and substituted the red salsa for a salsa verde... my husband took for lunch yesterday and his coworkers were wondering what smelled so good!!

I'm sorry yours turned out gummy. You could make the elements of it in a skillet and once the rice is almost cooked, fold in cooked chicken.
