What is Watergate Salad?
The origins of the name "Watergate Salad" and the Watergate salad original recipe are greatly debated. Some believe it was created and popularized by a food editor in the 1970s as a clever marketing tie-in during the Watergate scandal. Others contest this theory, suggesting the dessert predates the scandal.
Regardless of its origin, the name stuck, and the dessert became a beloved classic. Watergate salad ingredients are pretty much the same as this pistachio jello salad here, but I add folded in maraschino cherries for a pop of color, texture, and flavor.

Tips and Substitutions
Old-fashioned pistachio salad is incredibly versatile, so don't hesitate to get creative and tailor the recipe to your taste preferences and dietary requirements.
- Drain Pineapple Thoroughly (optional): If you want a firmer texture, drain the crushed pineapple.
- Variety in Nuts: While pecans are the traditional choice, you can use other nuts like chopped almonds, walnuts, or pistachios for a different flavor profile and texture.
- Experiment with Marshmallows: Instead of using plain miniature marshmallows, try flavored ones like coconut or strawberry for a unique twist.
- Choosing Whipped Topping: While Cool Whip is a popular choice, you can use homemade whipped cream as a more natural alternative. Simply whip together 3 cups heaving whipping cream, ½ cup powdered sugar and 1 teaspoon vanilla extract until stiff peaks form. The salad will keep for a couple days.
- Add a Creamy Element: For an extra creamy texture, added protein, and tangy flavor, consider adding a small container of sour cream or Greek yogurt in addition to the whipped topping.
- Experiment with Different Pudding Flavors: Other flavors you could experiment with are vanilla, banana cream, white chocolate, cheesecake, and more!
- Customize the Sweetness: If you prefer a less sweet version, use unsweetened whipped topping and reduce the amount of marshmallows or choose a sugar-free pudding mix.
- Garnish Creatively: Before serving, garnish the Watergate Salad with additional nuts, a sprinkle of cinnamon, or even a drizzle of caramel or chocolate sauce for an added visual and flavor appeal.
- Fruit Variations: While crushed pineapple is traditional, you can experiment with other fruits like mandarin oranges, maraschino cherries, or even fresh berries for added freshness and color.
- Ambrosia Salad Variation: This salad is similar but different...but equally delicious! For Lori's Ambrosia Salad with Cool Whip, you'll use vanilla pudding and different fruits. It's incredible!

Storage
After preparing the salad, cover it tightly with plastic wrap or transfer it to an airtight container. Place the covered salad in the refrigerator. When ready to serve, serve it chilled. It's best to consume within 2-3 days to ensure optimal freshness.
Freezing can change the texture of the whipped topping, marshmallows and pineapple, resulting in a less desirable consistency when thawed. It's not recommended to freeze.
Over time, the salad might release some liquid due to the moisture content in the pineapple and other ingredients. If this happens, give the salad a gentle stir before serving to recombine the ingredients.
