Mason Jar Mediterranean Salad
Easy to assemble and loaded with fresh veggies and flavor, this salad is quick to become a new lunch favorite! Rich in phytonutrients and fiber, a layer of Pure Flavor® Gourmet Mini Cucumbers adds the perfect crunch and hydration to this delicious salad!
Ingredients
- 2 tablespoon Greek dressing
- 2 tablespoon chopped red onion
- 2 tablespoon sliced green olives
- 1 ½ cups arugula
- ½ cup cooked quinoa (plain or flavored)
- ½ cup halved cherry tomatoes
- 1 ½ cups arugula
- ¼ cup sliced marinated artichoke hearts
- 1 Pure Flavor® Gourmet Mini Cucumber cut into discs
- 2 tablespoon halved kalamata olives
- 2 tablespoon crumbled feta cheese
Instructions
- Add all ingredients in the order listed to a 1 pint jar. Cover and refrigerate until ready to eat.
- Stored properly, the salad jars will last 3-5 days.
