How to Make This Recipe
- Quarter each tomato. Set aside 18 of the quarters. For the rest, deseed and finely dice.
- Cut the hard-boiled eggs in half lengthwise and remove the yolks. Place the yolks in a small mixing bowl and set the egg whites aside. Mash the egg yolks with a fork until they are crumbly.
- Add the mayonnaise, Dijon mustard, all but 2 tablespoons of the bacon, and the finely diced tomato. Mix well until the filling is smooth and creamy.
- Spoon or pipe the filling into the egg white halves. Garnish each halved, filled egg with a piece of crumbled bacon, a tomato quarter, and micro-greens or arugula. Dust the tops with freshly ground black pepper.
Tips and Substitutions
- You can use either regular or light mayonnaise. You can also use either regular or turkey bacon.
- Mayonnaise can be substituted with Miracle Whip if desired.
- I omit relish in Deluxe BLT Deviled Eggs, but you can certainly add 1-2 tablespoons of it back if that's how you prefer your deviled eggs.
- If making ahead of time, do everything but add the greens as they can wilt. Leave that for right before serving.
- If you have leftovers, you can chop them up to put in a wrap or on a sandwich. It's also great as an avocado toast topper.
Storage
- Deviled eggs can be stored in the refrigerator for up to four days in an airtight container or covered tightly with plastic wrap.
- Keep the deviled eggs chilled until you're ready to serve them.
- It's important to note that deviled eggs should not be left at room temperature for more than two hours, as this can cause the eggs to spoil and become unsafe to eat. If you're serving deviled eggs at a party or event, be sure to keep them chilled on ice or in a cooler.

Deluxe BLT Deviled Eggs
Ingredients
- 9 hard boiled eggs peeled
- ⅓ cup mayonnaise
- 1 tablespoon dijon mustard
- ½ cup cooked and crumbed bacon divided
- ½ pint Pure Flavor®Cloud 9 ® Bite-Sized Fruity Tomatoes divided
- ¼ cup micro greens or arugula leaves
- Black Pepper for garnish
Instructions
- Slice each egg in half lengthwise and gently remove the yolks. Place the egg white halves on a serving dish.
- In a medium bowl, break up and fluff the yolks. Add mayonnaise and dijon mustard and mix until it’s a cohesive blend.
- Quarter the tomatoes. Set aside 18 of the quartered tomato wedges. For the remaining tomatoes, remove the seeds and slice into smaller pieces.
- Fold the de-seeded tomatoes and all but 2 tablespoons of the bacon. Once combined, transfer the mixture into a plastic bag. Snip one corner of the bag and evenly pipe the filling into the halved egg whites.
- On each yolk filling, place small crumble of bacon, a couple micro greens or arugula leaf, and one quartered tomato. Sprinkle the stuffed eggs with black pepper.
