This 5-ingredient Burrata Caprese is a twist on the traditional recipe using burrata cheese rather than mozzarella. Burrata differs from mozzarella with it's soft and creamy center called stracciatella. With juicy, fresh tomatoes, basil, and balsamic glaze, this truly is the ultimate summer salad.

When Summer hits, a Caprese salad is always on our table at least once a week. This salad is a traditional Italian recipe from the island of Capri in Italy. It's made with the ripest, large tomatoes, fresh basil, balsamic vinegar, salt and pepper.

The original recipe for caprese salad uses mozzarella cheese, but in this version we are using burrata. If you've never had burrata before, trust me, you will probably like it even more than mozzarella (I'm serious!).

Give this twist on the classic salad a try at your next summer party or even weeknight meal, it takes only minutes to make!

What is Burrata?

Burrata cheese is stracciatella cheese which is mild in flavor and extremely creamy that's been wrapped in mozzarella. Think of your two favorite Italian cheese combined into one (this is why it's become such a favorite the past several years!).

Burrata comes from Puglia, a region in the south of Italy. The name means "buttery" or "buttered" thanks to it's incredibly creamy texture. It's delicate in flavor with a hint of sweetness to it.

We love to serve it with bread, on salads, and even on top of pasta!

Laura Ashley's Pro Tip: If you want to make this salad in the fall or winter, I recommend using cherry tomatoes rather than regular tomatoes since they will be sweeter and juicier in the colder months.

  • Ripe tomatoes: Be sure to buy the best in season tomatoes that are large ripe and juicy. Heirlooms are a favorite in our house. If it's a colder winter month, then use cherry tomatoes for their sweet and fresh flavor.
  • Burrata: We like the balls of burrata in the 4 ounce package.
  • Fresh basil: Be sure it's fresh and not dried, it makes a huge difference and adds that signature fresh flavor.
  • Olive oil: Drizzled all over the whole salad for a hint of buttery richness in each bite.
  • Balsamic glaze: We love the store-bought to save time, but you can always make your own since it's so easy. Just reduce 1 cup of balsamic vinegar until thick and syrupy. It adds the sweet and sour flavor that compliments the naturally sweet tomatoes so well.
  • Optional Toppings: These toppings aren't traditional to the classic Italian caprese salad but something we also love to add. Try sliced ripe avocado, roasted red peppers, or toasted pine nuts.

What cruise line did you use?

Royal Caribbean cruise line and Quantum of the Seas Ship.

What cities were on your cruise? What was your itinerary?

Royal Caribbean thought? Itinerary would you do differently?

I wouldn't change anything. I loved the stops we made and the excursions we chose.

We are leaving on the Quantum of the Seas in July. How are formal nights? Also, ideas on cores to pack?

Pack comfortable walking shoes and layers for most days. Formal nights are flexible. You can wear tuxedos and sparkly dresses or button up shirts and casual dresses and/or dress pants.

How does Royal Caribbean compare to Carnival Cruise Line?

I haven't gone on a Carnival Cruise, so I cannot speak from personal experience. My family just went on a Carnival cruise and said it was a lot of fun, but the food was sub-par.

What type of clothing did you pack for your formal nights and evenings on the ship? You mentioned a formal party/dinner. We want pics and more deets please.

Here are the two outfits I wore for formal night. The other night we wore business casual, usually jeans and a nice top.

Would you want to share how much this cruise cost?

Last year's 7 day cruise in the Caribbean was $610 per person. The price of a cruise depends on the time of year and type of room you choose. We wanted a balcony for this Alaskan cruise because there are so many stunning views. With that said, here were the numbers for this cruise:

Balcony Room Cruise for 2: $3198. Internet for 2 Devices: $237. 3 Excursions (6 tickets): $690

Is the drink package worth it?

Not to us. You get coffee, water, and tea for free. For the pop plan, you get a refillable cup that you can use at Coke stations. I don't like carrying the cup around. If I want a pop, I just buy a canned Diet Coke at the cafe. For the alcohol package, it all depends on how much you plan to drink. If it's just a couple drinks a day, it wouldn't be worth it. Also, there are 25-35% off discount offers you'll get after you book your trip.

Did you plan your own trip or travel agency?

We booked it ourselves as I feel booking a cruise is super easy. However, travel agents typically have great tips and aren't an "extra cost."

We go next June. Do I need a heavy coat or layer with sweaters and a light jacket?

I'd say layer with sweaters and/or a light jacket.

What was the average temperature? Looks like you always have a sweater or jacket on.

The mornings were in the 40s and the highs for the day averaged 55-70. Wearing layers that you can remove is ideal.

How many nights is good for an Alaskan cruise?

I felt 7 nights was excellent!

Did you cruise both ways to Alaska?

Our path was longer cruising on the front end and more stops afterward.

Can you always see land from the boat?

Not the whole time, but the Alaskan cruise definitely had more land in view for a longer period of time versus the Caribbean cruises we've done.

Did you have any nausea? How often were you seasick and what did you do to feel better?

I don't "typically" have any nausea or seasickness. However, on this Alaskan trip, one day the winds were up to 70mph with 13-17 foot waves, so that day I was feeling very sensitive. To combat what I felt "coming on," I took 2 Dramamine, and they leveled things out. They also made me super sleepy! There are lots of medications and methods that can help. Scopolamine is a patch that a lot of people on the ship were wearing. It's used to help prevent nausea and vomiting caused by motion sickness and applied at least 4 hours before its effects will be needed to leave in place for up to 3 days.

Did you fly into Seattle or Vancouver?

How was the food?

Super delicious! We always eat breakfast and lunch in the Windjammer. This is a buffet set-up large room. As a creature of habit, every day I get muesli and a made-to-order omelet for breakfast and lunch I'll make a salad from the salad bar and pick a protein to go with it. I love the food in the main dining room for dinner.

I've heard many people say it can be very boring. I don't see how LOL.

In my opinion, it's only boring if you let it be. Every day there are SO MANY activities on the ship to choose from. I will say, there are a lot of "sales pitch" style activities, but then there are lot of casual, relaxing, fun activities. The entertainment at night is usually top notch. There was one comedian that didn't knock it out of the park for me this time, but the rest were great. Bottom line, the cruise is what you make of it. If you stay in your room...boring for sure!

Did you guys go to Glacier Bay?

We did and it was BEAUTIFUL!

What animals did you see?

Unfortunately, we only saw otters and seals. Our friends did see whales as well.

What was your favorite part of the cruise?

My favorite part of the cruise is the time with family. I especially love that there's variety of activities to choose from and everyone can find something fun to do.

Would you move to Canada?

Not unless a job moved our family there. It was beautiful though!!

What excursions did you choose? What type of excursions did they offer? Something for everyone?

There's something for everyone for sure! We didn't do an excursion in Sitka. We explored their city and ate king crab. The white pass train ride in Skagway was my favorite excursion. Mendenhall Glacier was a stunner in Juneau. It came with a yummy salmon bake dinner. The e-bike tour in British Columbia was a lot of fun. Since we only had a few hours there, the bikes allowed up to maximize all of the hot spots to check out. Excursion are typically as low as $80 per person and up to $1000. A helicopter tour in Skagway or Juneau would be amazing! Obviously, we were having a lot of fun on the way down the mountain...

What activities did they have on the ship?

SO MANY! There are lots of music venues, rock wall climbing, bumper cars, air hockey, walking track, pools, jacuzzis, trivia, bingo, etc. There are also fantastic shows like a strongest man competition, love and marriage game show, and singing competitions. Each night there are scheduled shows (singers, musicals, broadway shows, magic shows) that are usually great.

I don't eat seafood or fish. Will I starve?

Absolutely not! There are foods literally of all kinds! You'll have plenty to choose from.

With a balcony room, do you feel less motion?

The middle of the ship and not at the highest level is your best bet. A balcony room for a view and fresh air can help as well.

Final Tips

  • You can either make reservations at different times each day or choose 5:00 or 8:00 dinner time. We always choose the 5:00 dinnertime as we like the consistency and having the same table/waiters every night.
  • The beds are rather firm, but once you get there, you can request a comfortable topper for the bed and extra blankets.
  • The coffee at the cafe on the main level is so delicious! You can buy a coffee punch card to save money or you can pay per cup.
  • Bring binoculars! They sell them on the boat if you forget them.
  • Book excursions early because they sell out!
  • Sometimes cruises have shows you need to make reservations for. This can be done on the app.
  • Your sea pass card is your golden key for the week. You scan it everywhere you go, getting on and off the boat and any purchases you make on the boat.

This Mediterranean Tomato and Cucumber Salad is less than 10 ingredients and takes only 15 minutes to prepare. This easy Mediterranean Cucumber Salad is a spring and summer staple salad recipe in our house. With a handful of ingredients (less than 10!) that have a decent fridge or shelf life, it's great when you need a fresh side dish or appetizer to start a meal.

Oftentimes salads need to be eaten immediately after they're assembled, but not with this tomato and cucumber salad. It's actually best after the flavors have marinated for an hour or two. It also stores well for up to 3 days, making it the perfect meal prep weekday salad too.

We keep the dressing simple and traditional to a standard Greek salad with olive oil, red wine vinegar, and dried oregano. Fresh parsley and crumbled feta take this Mediterranean tomato and cucumber salad to another level, so I definitely recommend adding them in!

Dolly Parton recipes from her Stampede Dinner Attraction are too delicious, I just had to create my own. Her Creamy Vegetable Soup, Garlic Biscuits, and finger lickin’ delicious Chicken are my favorites!

Once Dixie Stampede and now known as Dolly Parton’s Stampede, it’s known as “the most fun place to eat.” They have 2 locations in Pigeon Forge, Tennessee and Branson, Missouri. I’ve been to this dinner/show attraction no less than 25 times in my life…and I’d go 25 more! They’ve had the same Dixie Stampede menu all these years, and I made it my mission to re-create them at home!

The creamy vegetable soup Dixie Stampede started serving in 1987 and Dolly Stampede continues to dish up also has a premade mix. You can buy in store and on their website. It’s tasty as well, but my homemade Dixie Stampede soup is so quick to make and super delicious!

How to Make this Recipe

  1. Preheat a grill to medium-high heat or 350°F; grease grate well. Lay Pure Flavor® RedRoyals® Sweet Cherry Tomatoes and grapes on a grill basket. Brush each with olive oil and season with salt and pepper.

  1. Toss chicken with oil, lemon juice and barbecue seasoning mix. Grill the chicken, flipping every 4 to 5 minutes, until the chicken is cooked through and registers with an internal temperature of 165°F.

  1. Place the grill basket of tomatoes and grapes on the grill. Cook 10-12 minutes, or until the skin on both are starting to split. Remove and set aside.

  1. Build the salad on 1 large platter or on individual salad plates. Start with lettuce, followed by red onion, cheese and asparagus. Using kitchen shears, snip the cooked grapes and tomatoes into 3 inch segments. Lay the segments on top of the salad, followed marcona almonds.

  1. Thinly slice chicken across the grain. Serve chicken and dressing on top of the salad or or the side.

Tips and Substitutions

  • While the vine makes for beautiful presentation, guests might not know how to remove them from the vine. Most of the time, they will easy pull away from the vine. You can also demonstrate by pulling off with your fingers or by sliding your fork between the tomato and/or grape and the vine and pushing away into the salad.
  • If you don't have a grill, this recipe can easily transition to a stove-top made meal! Simply use a grill pan on medium-high heat and cook the chicken, tomatoes and grapes the same way as instructed on the grill.
  • Marcona almonds can be substituted with regular or candied almonds, walnuts or pecans.
  • To make the asparagus easier to shave, lay flat on a cutting board and run the vegetable peeler from the top to the bottom.

Storage

  • Store leftovers in an air-tight container in the refrigerator for 2-3 days. The crispness and freshness lesses the longer it's stored. This recipe is not ideal for freezing.

Lucky Candy coated pretzels are a delicious and easy-to-make treat perfect for any occasion and liked by people of all ages.

This delicious candy coated treat is perfect for every occasion! They’re the perfect combination of sweet and salty flavors and have such a satisfying crunch. The pretzels can be dipped in chocolate or candy coating, but I personally prefer vanilla candy coating.

Also known as vanilla-flavored confectionery coating or almond bark, candy coating is a type of coating used for dipping or coating confections. It's a popular alternative to chocolate as it's easier to work with and doesn't require tempering. It’s made from a combination of sugar, vegetable oil, milk powder, and flavorings such as vanilla or almond extract.

Candy-coated pretzels can be made in a variety of colors and decorated with sprinkles, drizzled chocolate, or other toppings to add flavor and visual appeal. They're often served as a fun and festive snack at parties, holidays, or other special events.

  2. Once melted, add 1-2 drops of your desired food coloring. Mix until it’s one consistent color.

  1. Dip a pretzel into the melted candy coating, making sure to coat it evenly. You can use a fork to help you dip the pretzels. Shake off any excess coating.

Sprinkle them over the top of the candy-coated pretzel while the coating is still wet. Repeat the process with the remaining pretzels until they're all coated.
