  1. To a large Crockpot, stir together broth, carrots, celery, garlic powder, onion powder, flaky poultry seasoning, basil, salt, pepper and chicken.
  1. Cover and cook on low for 5-6 hours or on high for 3-4 hours.
  2. Uncover and either break apart the chicken inside the Crockpot with a meat chopper or transfer to a bowl, shred with 2 forks, and return to the Crockpot.
  1. In a small bowl, whisk together cornstarch and milk.

With the cozy fall here, we had to make a Pumpkin Coffee Cake version with all the flavors of pumpkin pie spice and cinnamon.

This really is the ultimate version of a coffee cake with a streusel topping, you’ll be making it all season long. We’ve made it so many times already and our family and friends are huge fans. Don’t tell anyone, but it may be better than pumpkin bread!

  2. For the cake, in a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice.

  2. In a medium bowl, combine self-rising cornmeal mix and self-rising flour. Stir in milk and eggs just until combined.  
  1. Preheat a 12-inch and 9-inch cast iron skillet over medium-high heat on the stovetop or in the oven for 3 minutes. Once hot, add bacon grease or butter, ensuring the entire surface has been greased. Pour the cornbread batter into the prepared skillets.

  1. Bake 20-25 minutes or until fully baked through and golden brown. Remove from the oven and cool completely.

Dressing Recipe

  1. Preheat oven to 350°F. Grease a 13x9-inch and 9x9-inch baking dish with butter.  
  2. Crumble the prepared corn bread and biscuits in a large mixing bowl.
  1. Add ground sage and onion.

  • Cut it in Half. This recipe makes enough to feed a crowd. If you're looking to feed just a few people, cut all of the ingredients in half and bake in a 13x9 inch baking dish.
  • Prep Ingredients Ahead of Time. If possible, make your cornbread and biscuits 1-2 days ahead of time so that it has time to dry out a bit. You can also dice the onion and measure the sage in advance to make your holiday day prep go smoother.
  • Add More Flavorful. The recipe Southern Cornbread Dressing can vary from family to family. Consider adding sautéed chopped celery and carrots for added texture and flavor. Chopped water chestnuts are also a popular dressing addition.

  • Season Well. Taste your dressing mixture before pouring into the baking dish. Typically, adding salt isn't necessary because the broth and cornbread has it. However, you can add some if you feel your palate says to. You can add additional herbs like thyme or rosemary for complexity.

What's dressing without gravy? An incomplete meal in my books! They're a match made in holiday heaven!

If you want to make mamaw's gravy to ladle on top of your dressing and all over your potatoes and turkey too, here's her simple recipe:

  • Pour 8 cups turkey broth in saucepan, and bring to a boil. In a small bowl, whisk together ¼ cup cold water and ¼ cup cornstarch. Whisk the cornstarch slurry into boiling broth. Make and add additional cornstarch slurry if you desire a thicker texture. Optional, dice ½-1 cup of the cooked giblets and/or turkey and add to the gravy. Season with salt and pepper to taste.

Ingredients

Cornbread for Dressing

  • 5 cups self-rising cornmeal mix
  • 1 cup self-rising flour
  • 4 cups milk
  • 2 large eggs
  • 2 tablespoons bacon grease or salted butter

  • 2 cups crumbled buttermilk biscuits
  • cup dried rubbed sage
  • 1 cup finely minced yellow onion about 1 medium onion
  • 11 cups turkey or chicken broth can use stock as well

Instructions

Cornbread for Dressing

  • Preheat oven to 450°F. 
  • In a medium bowl, combine self-rising cornmeal mix and self-rising flour. Stir in milk and eggs just until combined.  
  • Preheat a 12-inch and 9-inch cast iron skillet over medium-high heat on the stovetop or in the oven for 3 minutes. Once hot, add bacon grease or butter, ensuring the entire surface has been greased. Pour the cornbread batter into the prepared skillets. 
  • Bake 20-25 minutes or until fully baked through and golden brown. Remove from the oven and cool completely.

Dressing Recipe

  • Preheat oven to 350°F. Grease a 13x9-inch and 9x9-inch baking dish with butter.  
  • Crumble the prepared corn bread and biscuits in a large mixing bowl.
  • Add sage and onion. 
  • Pour in the turkey or chicken broth, and stir until combined well. The mixture will be very moist. 
  • Pour the mixture into the prepared baking dishes, and spread evenly.
  • Bake at 350° for 1 hour or until golden brown on top and set.

Turkey Gravy (Optional)

  • Pour 8 cups turkey broth in saucepan, and bring to a boil. In a small bowl, whisk together ¼ cup cold water and ¼ cup cornstarch. Whisk the cornstarch slurry into boiling broth. Make and add additional cornstarch slurry if you desire a thicker texture. Optional, dice ½-1 cup of the cooked giblets and/or turkey and add to the gravy. Season with salt and pepper to taste.

We've been making goulash for years. It's one of our lazy, go-to dinner recipes during a busy week or when entertaining friends and family. There's little to no mess since it only uses one pot. I also make sure to keep most of the ingredients in the pantry and freezer all the time to be able to whip this up quickly.

  1. To a Crockpot, combine water or chicken broth, gravy mix, condensed cream of chicken soup, garlic powder, paprika, salt, and pepper.

  1. Once combined, add the chicken, coat well with the sauce, cover, and cook on high 4-5 hours or low 6-7.

  1. Remove the chicken and split into large pieces. Add cream cheese to the Crockpot. Cover and cook on high 2-3 minutes, then whisk until blended well. Gently fold the chicken back into the gravy.

  1. Serve the chicken over stuffing, mashed potatoes, rice, noodles, or mashed cauliflower with a ladle of gravy on top.

  1. Melt butter in a large saucepan on medium-high. Add chopped onion and mushrooms, and cook until tender and translucent, about 3-5 minutes.

  • You can omit the cream cheese and substitute with 1 cup half-&-half and 2 tablespoons whisked together or 1 cup heavy whipping cream and 1 tablespoon cornstarch whisked together.
  • Use any boneless, skinless cut of chicken that you prefer. With their higher fat content, thighs can add extra flavor and tenderness to the dish.
  • If you don't like using cream of chicken soup from a can, here is how you can make it from scratch:
    • Melt 3 tablespoons butter in a saucepan over medium heat. Whisk in ⅓ cup all-purpose flour and cook for 1 minute. Whisk in ⅓ cup milk and ⅓ cup chicken broth until well combined. Season with ¼ teaspoon onion powder and salt and pepper to taste. Stir and cook for 1-2 minutes or until thickened and creamy.
  • For a quicker version of this dish (that takes only 20 minutes!) make it on the stovetop. I like to use leftover chicken or shredded rotisserie for another shortcut. 
    • Combine water or chicken broth, gravy mix, chicken soup, garlic powder, paprika, salt, and pepper in a large sauce pan, bring to a boil then lower to the heat low. Simmer, stirring often until the mixture begins to thicken. Add the cream cheese. After 10 minutes, whisk until blended. Fold in the cooked chicken. Once heated through, serve over your desired side dish.
  • If you prefer a homemade chicken gravy mix, here is a blend you can mix together. You'll only need to use 8 teaspoons of the mixture for this recipe:
    • 1 cup All-Purpose Flour, ¼ cup Chicken Bouillon Powder, ½ teaspoon each: Ground Black Pepper, Garlic Powder, Marjoram, Onion Powder, Onion Powder, Ground Rosemary, Ground Sage
