The new school year is upon us! The excitement of fresh notebooks, new teachers, and reuniting with friends is in the air. While preparing for this transition, one crucial aspect often overlooked is planning healthy snacks for kids.

Ensuring that both you and your children are fueled with nutritious foods throughout the day is essential for their academic performance, energy levels, and overall well-being. As a registered dietitian nutritionist and certified diabetes care and education specialist, I’ve got some lunch box meal ideas and snacks that will help get you off to an A+ school year!

Nature's Garden Probiotic Yoggies are a Healthy Snack for Kids!

Do you remember Yogos? If you were a fan and were bummed that they’ve been discontinued, rest assured! I’ve got something you’ll love even more. I recently discovered Yoggies!

On a work trip to Chicago, I found myself super hungry without any food on hand. A friend of mine pulled a bag of Yoggies from her purse and said “Try these fruit yogurt bites! They’re amazing and will hold you over!” Boy, was she right! They were delicious and hit the spot!

Probiotic Yoggies gave me the immediate fun memory of Yogos candy, but with a bonus of healthy nutrition benefits. They’re a yogurt covered fruit snack with the perfect amount of sweetness! They pack a powerful punch of probiotics and fiber, are gluten-free, non-GMO, and contain no artificial flavors or ingredients. Bonus, they're conveniently portioned in small packs for an easy grab-and-go option.

You might ask, “what are probiotics and why are they important?” Probiotics are live bacteria that are essential in maintaining a healthy gut biome, working to improve digestion and maintain your immune system. Through a patented system, these fiber snacks contain billions of probiotics from natural resources that microencapsulate Yoggies, ensuring the power of each probiotic is maintained as is passes through the digestive system.

While the answer to “Can I get Yogos?” is a no, probiotic Yoggies will instantly turn that frown upside down! They’re a healthy snack for kids and adults made with real ingredients and a billion benefits! They're an indulgent treat you can feel good about! Be sure to toss a pack in your lunch box, purse, or backpack!

What Are Fried Green Tomatoes?

Fried Green Tomatoes are exactly how they sound - green tomatoes, which have been coated in a breadcrumb topping and then fried to golden brown perfection!

You can use either unripe or ripe green tomatoes - the unripe variety is ideal for frying (and for this recipe). They are slightly firmer and less juicy than regular tomatoes which makes them the perfect texture and flavor for frying.

They're a bit more tart than regular tomatoes and taste delicious once breaded in a crisp coating and fried. The ripe kind are usually heirloom, and while they're delicious, they don't have the same tang as the unripe ones.

  • Green Tomatoes: Find these at most grocery stores or pick them up from a local farm stand or green market. They're green in color, underripe, firm, and slightly tangy in flavor - making them perfect for dredging and frying.
  • Buttermilk: Thick and tangy, this will help the cornmeal coating stick to the tomatoes.
  • Self Rising Flour Cornmeal Mix: Slightly nutty with great texture, this coats the tomatoes and gives them a great crunch factor.
  • Panko Breadcrumbs: Light and airy, these are added into the coating, too, and make the tomatoes perfectly golden and crispy when fried.
  • Seasoning Salt or Salt & Pepper: Essential when cooking anything, especially here, to season the tomato breadcrumb mixture.
  • Oil or Bacon Grease: Use a neutral oil here to fry in. And make sure your oil is hot enough before you add in your tomatoes! If you've got bacon grease on hand, feel free to use this to fry in for even more flavor.
  • Bread: Sourdough, ciabatta or white are our favorites. Toast thick slices for extra texture, but feel free to use any type of bread, bun or roll you've got.
  • Mayonnaise: Tangy and rich, this is the perfect spread for this sandwich
  • Lettuce & Heirloom Tomatoes: Fresh and colorful, these add nice flavor and a cool, refreshing crunch.
  • Bacon & Avocado: Optional toppings, but we suggest taking the option! Everything's better with bacon, after all. And creamy avocado will take this sandwich to the next level.

How To Make A Fried Green Tomato Sandwich

  1. Slice the green tomato into ¼-inch thick slices. Place in a shallow dish and pour the buttermilk over them, making sure they are well coated. Let them soak for at least 10 minutes.

  1. In a shallow bowl, combine the flour cornmeal mix, breadcrumbs, and seasoning salt or salt and pepper.
Adding seasoning salt to flour.
  1. Heat about ½ inch of grease or oil in a large skillet over medium-high heat. Take each tomato slice from the buttermilk, letting the excess drip off, and dredge it in the flour mixture, pressing lightly to adhere. Place the coated tomato slices on a plate.

  1. Once the oil or grease is hot, carefully add the coated tomato slices to the skillet, a few at a time, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 3-4 minutes per side. Remove and drain on a paper towel-lined plate. Season with more seasoning salt or salt, if desired.

  1. Toast the bread slices if desired. Spread a generous amount of the mayo on each slice of bread. Layer with lettuce, heirloom tomatoes, fried green tomatoes, bacon (if using), and avocado slices (if using). Top with another slice of bread.
  2. Slice the sandwich in half and serve immediately.

Expert Tips From a Southern Chef

  • Slice Tomatoes Thick Enough: Be sure to slice your tomatoes thick enough. If they're too thin, they won't hold up to the coating and fry well. ¼-inch-thick slices work nicely - you'll get just enough of the tangy tomato flavor with the perfect crunch from the breadcrumb-cornmeal mixture.
  • Cornmeal Flour Mix Alternative: If you don't have self-rising cornmeal mix on hand, you can instead use ⅓ cup cornmeal, 1 ½ tablespoons all-purpose flour, 1 ½ teaspoons baking powder, and ¼ teaspoon salt.
  • Season The Coating: It's essential to season the mixture you're coating the tomatoes in to give them nice flavor. And be sure to really press this mixture into the buttermilk soaked tomatoes so you've got a nice, thick coating. We suggest salting the tomatoes right after they come out of the hot oil, too!
  • Use Hot Oil: Be sure your fry oil is hot enough before adding the tomatoes. You can use a thermometer (degrees is ideal) or sprinkle in a few breadcrumbs as a tester, but if your oil isn't hot enough, your tomatoes will become greasy and won't brown nicely. On the flip side, watch the oil so it doesn't get too hot - a burnt fried green tomato is no one's friend!
  • Drain Tomatoes: Once they're fried to golden perfection, remove your tomatoes to drain on a paper towel-lined plate, or on a cooling rack. This will get rid of any excess grease, so your sandwich doesn't taste too oily!
  • Bake Bacon in the Oven: This is a simple way to make bacon without splatter and the slices stay flat and cook evenly. Simply place bacon on an aluminum foil lined sheet pan and bake at 400ºF for 16-20. The time will vary based on the thickness of your bacon and preferred level of crispiness.
Placing bacon on a sheet pan.

Variations

  • Change Up The Bread: Sliced sourdough, white or ciabatta are our favorites, but you could make this sandwich with any other favorite bread. Try a brioche bun, rolls, or even a crusty baguette - no carb left behind!
  • Get Creative With Condiments: Mayonnaise is perfectly simple and delicious, but add any other condiments to change up the flavor profile here. A zesty homemade or store-bought remoulade, "secret" sauce or garlic aioli would be delicious, or add sliced pickles, banana peppers, pickled onions or jalapenos, or even fresh veggies you've got in your fridge. Make this sandwich your own!
  • Add Meat: We love smokey bacon in this recipe, but why stop there? Try adding sliced turkey or your favorite deli meat to take your sandwich to the next level.

FAQs

What is good with fried green tomatoes?

The options are endless! Fried green tomatoes on a sandwich pair well with a creamy sauce or mayo-based dressing, and fresh toppings or condiments. And this sandwich goes great with any salad or side dish, or even just a handful of crunchy potato chips!

What is so special about fried green tomatoes?

They've got a signature slightly tart and sweet flavor that makes them stick out from other tomatoes. When these unripe tomatoes are dredged in a cornmeal coating and fried, they're just perfect.

Why do you fry green tomatoes and not red?

Green tomatoes are slightly unripe, so they can really hold up to being dredge in a breadcrumb coating and fried. They're firm enough and have a nice tangy flavor that is even more delicious after they've been cooked in the fry oil.

Are green tomatoes just unripe?

Technically, yes. Green tomatoes are usually young tomatoes that have not ripened yet. They can vary in color and taste but they are usually firmer than regular red tomatoes and they have a nice, tangy, slightly tart flavor that can hold up to being coated and fried. Some heirloom tomatoes are green in color, but these are ripe and have a different flavor profile than the green tomatoes you'd usually use to fry.

As a southern gal, pimento cheese sandwiches hold a special place in my heart. We ate them all the time growing up - it was the perfect lunch. So to celebrate the southern speciality, we're combining two classics into one tasty creation with this Pimento Grilled Cheese sandwich!

This grilled version of a Pimento Cheese Sandwich is super simple to prepare yet unbelievably satisfying. Serve it on its own, as a shared snack, or as a part of a bigger meal. • Tasty Twist on Tradition: This recipe amps up not one but two classic recipes. Traditional pimento cheese goes next level, as it's turned into a warm, griddled sandwich, and the original grilled cheese sandwich gets a flavor blast with the southern pimento cheese.
  • Versatile: Not only is this sandwich gooey, delicious, and easy to make, but you can customize it to anyone's taste preferences. Add some thick sliced tomatoes, crispy bacon, or even sliced jalapeños to take this sandwich to new flavor heights.

  • Bread: White, sourdough or whole wheat work great here. Use your favorite sliced variety from the store or bakery, and this will be the base and anchor for your grilled cheese sandwich.
  • Pimento cheese or Store-Bought Pimento Cheese: Made with sharp cheddar, tangy pimento peppers and creamy mayonnaise, this makes for the perfect, decadent cheesy filling for this grilled sandwich.
  • Mayonnaise or Melted Butter: The key ingredient to coat the outside of the sandwich before griddling. Both work well to create a nice golden crust on the outside of the bread.

  1. Preheat a skillet or griddle over medium heat.
  2. Spread a thin layer of mayonnaise or softened butter on one side of each slice of bread.

  2. Place the assembled sandwich on the preheated skillet. Cook for about 3-4 minutes per side, or until the bread is golden brown and crispy, and the pimento cheese is melted and gooey. Adjust the heat as needed to ensure the bread doesn't burn before the cheese melts.

  1. Remove the sandwich from the skillet and let it cool slightly before cutting in half. Serve warm.

Expert Tips and Variations

  • Add Toppings: This grilled cheese is delicious as is, but if you've got extra ingredients on hand, add them to your sandwich to take it to a whole new level. Sliced tomatoes or spicy jalapenos add freshness, flavor and a little kick. Or crispy bacon would add a delicious and smokey note too.
  • Use Mayonnaise: It might sound strange, but we love spreading mayonnaise on the outside of the sandwich before cooking it. Butter definitely works, but there's something extra special about mayonnaise - it spreads easier than butter and doesn't tear the bread, it gets the bread evenly toasted and golden brown, and it adds a little extra flavor to the sandwich. Don't knock it 'till you try it!
  • Cook On Medium-Low: Hear me out, slow and steady wins the race here. If you cook your sandwich over medium-low heat, you'll get a perfectly crisp on the outside, melty on the inside grilled cheese that's gooey with a golden crust. If you cook it over too high of a heat, you'll risk burning your bread before the cheese even melts.

Storage Instructions

  • If you've got extra pimento cheese on hand, store it separately from the bread in an airtight container in the fridge. It'll keep for 3-5 days. Assemble your sandwiches right before you're ready to cook them, and enjoy!
  • If you have a few extra sandwiches on hand, you can also store these in the fridge - wrap them in foil or place in zip-top food storage bags, and refrigerate for 3 days. When you're ready to enjoy, gently re-heat in a skillet or on a griddle over low heat, or in a 350-degree oven, until the outside is crisped and the middle is melty.

What To Serve With Pimento Grilled Cheese Sandwiches

This grilled cheese sandwich is perfection on its own, but if you'd like to make it more of a meal, serve it alongside of any of these salads or soups.

  • Ranch Dressing: Adds a zesty, tangy flavor to the dressing and helps to thin it out a bit.
  • Cheddar Cheese: Sharp and delicious in flavor, cheddar goes perfectly on this sandwich and pairs well with the bacon.
  • Bacon: Smokey and crispy, this adds nice flavor and texture to the sandwich.
  • Celery: Adds a french and crunchy bite to the chicken salad.
  • Green Onions: Provides a mild onion flavor and a nice pop of color.
  • Garlic Powder and Onion Powder: Dried spices you probably already have on hand, these help to subtly flavor the chicken salad and help enhance the other flavors.
  • Salt and Pepper: As I always say, season everything with salt and pepper! It makes everything taste better, trust me.
  • Croissants: Rich, flaky and buttery, soft croissants are the perfect vessel to eat this delicious, tender chicken salad on.

Laura Ashley's Tip: Use rotisserie chicken for a quick shortcut, it's just as delicious as making it from scratch!

  • Shred Chicken While Warm: Shred the breast meat shortly after cooking it while it's still slightly warm. It'll shred easier this way versus when it's cold.
  • Let Flavors Meld: Once you've mixed together the salad, let it sit in the fridge for an hour or so (or even overnight) to let the flavors meld. It's one of those things that tastes better with time!

Variations and Mix-Ins

  • Add Fruit: Sweet, crunchy fruit add great flavor and texture to chicken salad. Try halved red or green grapes, diced apples, raisins or even any dried fruit.
  • Go Nuts for Nuts: Chopped or toasted nuts add texture and flavor in every bite. Almonds, pecans or walnuts would be delicious.
  • Add Toppings: Load up your sandwich with fresh, crunchy, and flavorful toppings like butter lettuce, sliced heirloom tomatoes, tangy pickled onions, or spicy pickled jalapenos.

Storage and Make-Ahead Instructions

  • Make-Ahead: This chicken salad recipe can be made ahead of time, and in fact, actually tastes better if you let it sit for a few hours before serving. Make this in advance to let the flavors meld and serve it a few hours, or even the next day for best results. Just be sure to keep the croissants separate so the sandwiches don't get soggy.
  • Fridge: Store any leftover chicken salad in an airtight container in the fridge for up to 3-5 days. Store the croissants separately, and when you're ready to enjoy, simply assemble your sandwiches.

A bowl full of cheeseburger salad.

This Cheeseburger Salad is a recipe that's just so dang good pretty much any night of the week. If you need a quick dinner, it's so quick to assemble with just 15 minutes of prep time. This salad is originally inspired by a Pampered Chef salad that I used to make several years ago.

Our family and friends loved that Pampered Chef salad so much, I've recreated my own recipe over the years and just had to share it with all of you! Use whatever fun burger toppings you already have in your fridge to make this recipe fun for the whole family.

I will say the real secret to making this salad extra special is the seasoned beef. We add ketchup, mustard, pickles, and onions to ours so it's truly a hamburger in a skillet! Plus we use hamburger buns as croutons, it's genius!

If you love a fun dinner salad, we do too! You have to also try our Chick-fil-a Cobb Salad, Loaded House Salad, and Cornbread Chicken Salad.

Why You'll Love this Recipe

  • Easy Dinner Recipe: This is a foolproof recipe, great for anyone to make successfully!
  • 15 Minute Prep Time: Perfect for busy weeks, this hamburger salad keeps it simple with just 15 minutes of prep time.
  • Customize to Everyone's Liking: Make a burger salad bar! You can really add whatever toppings you love here.

Laura Ashley's Tip: We love using beef in our burger salad, but feel free to use whatever type of meat you want! Ground turkey, chicken, or vegan meat crumbles all work great!

  • Ground beef, chicken, or turkey: The meat base for the burger mixture, use whatever ground meat you like!
  • Garlic powder: Adds that hint of garlic flavor that every burger patty needs.
  • Red onion: We add some to the cooked beef crumbles and some on top to garnish.
  • Cherry tomatoes: These are the perfect salad topper for that classic burger flavor.
  • Dill pickles: Can't forget the pickles, we love dill for the briny flavor, but use whatever kind of pickle you like.
  • Ketchup: Added to the meat mixture to give it moisture and that classic flavor.
  • Yellow mustard: Gives a bright flavor to the meat mixture.
  • Cheddar cheese: We love the classic cheddar, but use whatever shredded cheese you like! Pepper Jack, white cheddar, and gruyere would also be delicious.
  • Romaine or iceberg lettuce: The key with the lettuce is to choose one that's crunchy!
  • Pretzel or hamburger buns: We use these as croutons, both make a great toasted and crunchy topper.

Pro Tips for Recipe Success

Now I'm thrilled to tell you that this hamburger salad is a tried-and-true recipe that's guaranteed to work every single time. That's why it's on our busy weeknight rotation! Here are some other tips to keep in mind:

  • Great way to use up leftover buns and burgers. If you happen to have leftover buns or hamburgers from a cookout, this salad is the perfect way to reuse leftovers!
  • Make it Vegetarian. Use vegan beef like Beyond Meat instead of classic meat here.
  • Swap out the cheese. We use cheddar, but you should use your favorite kind! Shredded white cheddar, pepper Jack, gruyere, or blue cheese would all be great choices.
  • Add other toppings: Some other ideas to top your salad are bacon crumbles, diced avocado, salsa, and caramelized onions. The world is your oyster when it comes to customizing this salad!

Storing Leftovers

Even better news, this salad is great to store for leftovers for the next day. We like to store all the components separately to keep them fresh. They store well in the fridge for up to 3 days.

Reheat the beef right before serving then build the salad, it will still taste so fresh! If the beef seems dry, add a splash of water to the skillet and it will become good as new in no time.

We don't recommend freezing this salad, it will change the texture of the ingredients.

This chicken salad is quick to mix up, perfect for a light meal and beautiful for entertaining. When we had our restaurant, it was one of our most popular dishes. To this day, my mom and I still get requests for the recipe. It’s too yummy to keep hidden, so here it is for you to enjoy!

There are many variations of chicken salad and ways to serve it, but this is how we prepared it every day at the restaurant. It’s creamy with a perfect crispness from the pecans and veggies and lovely sweetness from the grapes and sweet relish. You can easily adjust the ingredient amounts to your personal preference. It’s excellent served on a bed of lettuce, with crackers, on a croissant or on light bread.

Tips and Substitutions

  • Nearly any cooked chicken will work in this recipe. We use freshly boiled in salt water chicken in ours. If using a higher sodium or seasoned chicken like a rotisserie or leftover seasoned grilled chicken, you will likely need to add additional sweetness with sugar and/or grapes and it will likely need a little more mayonnaise after it sits 1-2 days in the fridge.
  • Grapes are the only fruit we add to our chicken salad and how we did it at the restaurant, but they can be substituted with chopped strawberries, apples, dried cranberries or dried cherries.
  • Pecans can be substituted with walnuts or almonds or omitted completely.
  • Red onion can be substituted with green onions.
  • You can get creative with the flavors by adding different fresh or dried herbs.
  • Sugar substitute can be used in place of sugar.
  • Regular or light mayonnaise works in this dish.

Storage

  • Store chicken salad in the refrigerator in an air tight container up to 5 days.
  • It is not recommended to freeze and thaw chicken salad.
  • If the chicken salad has been left out at room temperature for more than two hours, discard it to avoid the risk of food poisoning.

Frequently Asked Questions

How should I serve chicken salad at an outdoor event?

It’s best if the chicken salad can be served inside a pre-chilled dish. The FDA guidelines state that chicken salad should not sit at room temperature for longer than two hours. If the temperature is above 90°F, the chicken salad should be refrigerated after only one hour.

What if I don’t like celery?

You can substitute celery with 1-2 teaspoons celery seed or simply omit it.

I’m allergic to pecans. Do they have to be included?

No, you can either substitute the pecans with a different nut or omit them completely.

Is Southern Chicken Salad gluten free?

Yes, my recipe does not contain any gluten containing ingredients?

Is this a good option for someone being mindful of their carbohydrate consumption?

Absolutely! As with any recipe, you can easily adjust the type and/or amount of a few of the ingredients to make it more carbohydrate friendly. One cup of this Southern Style Chicken Salad has 10 grams of carbohydrates.

Storage and Freezing

Best part about this soup is it's great for meal prepping for the week. Sometimes I make a double batch just so I can freeze half of the soup for a later date!

Refrigeration: Allow the soup to cool to room temperature after cooking. Transfer to an airtight container and store in the refrigerator up to 5 days.

Freezing: If you want to store vegetable soup for an extended period, cool it to room temperature and portion it into freezer-safe containers or resealable plastic bags. Leave some space at the top of the containers or bags to account for expansion during freezing. Freeze up to 2-3 months.

Reheating: You can reheat refrigerated vegetable soup in the microwave or in a pot on the stove over medium heat. Ensure it reaches a safe internal temperature of at least 165°F. For frozen soup, thaw it in the refrigerator overnight before reheating.

Storage

The more moisture a sandwich has, the more likely the bread is to become soggy over time. In this situation, the cranberry salsa, dijon and mayo contribute quite a bit of moisture.

This sandwich is at its peak quality when it is freshly made. If. you have leftover sandwich, once it's completely cooled, it can be stored in the refrigerator in an airtight container up to 2 days.

While you can technically freeze a panini press sandwich, it's not recommended. Freezing and thawing can significantly impact the texture of the bread, making it mushy when reheated. If you must freeze the sandwich, wrap it tightly in several layers of plastic wrap to minimize freezer burn and consume it as soon as possible after thawing.

FAQs

What is a turkey gobbler made of?

The turkey gobbler is made of leftover thanksgiving or deli turkey, cheddar cheese, honey dijon mustard, mayonnaise, cranberry salsa or sauce and is sandwiched between grain-rich buttered bread slices.

Where did the gobbler sandwich originate?

The gobbler sandwich originated in our restaurant many years ago. It was the number one selling sandwich we served during the holidays.

Should I heat the gobbler sandwich?

The gobbler sandwich can be eaten cold. However, when heated, it fuses all of the ingredients and their flavors together. The cheese melts and melds with the other ingredients and the toasted exterior adds a crispy satisfying crunch!

Is there a specific order to layering the gobbler sandwich?

Yes! It's best to ensure your outside of the bread butter and inside spreads are spread evenly across the slices. On each slice of cheese needs to lay 1 slice of cheese. Between the cheese will be the turkey and holiday salsa.

Can I melt cheese on the gobbler sandwich and how should I do it?

Yes! As the sandwich is pressed in the panini press or grilled in a skillet or grill pan, the cheese will slowly melt and marry all of the ingredients. It's important not to have the heat turned up too high to ensure the bread doesn't burn while the cheese needs time to melt.

What if I don't have a panini press for this sandwich?

If you don't have a panini press, you can achieve a similar effect by grilling the sandwich on a stovetop grill pan or a regular non-stick skillet. Apply gentle pressure with a spatula to mimic the pressing effect.
