Baked Beans For A Crowd
Servings: 20 people
Ingredients
- 12 oz bacon diced
- ¾ cup diced sweet onion
- ¾ cup diced green bell pepper
- 4 garlic cloves minced
- 3 tablespoon smoked paprika
- 1 tablespoon chili powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ¼ cup apple cider vinegar
- ½ cup barbecue sauce
- ½ cup ketchup
- ¼ cup dijon mustard
- 3-4 tablespoon brown sugar
- 2 55 oz cans baked beans
- Hot Sauce to taste
Instructions
- Preheat the oven to 400ºF.
- Heat a large skillet over medium heat, and cook bacon until brown and crispy. Transfer to a paper towel lined plate and set aside.
- Remove all but 2-3 tablespoon of the bacon grease from the pan. Sauté the onion, pepper and garlic in the skillet for 1 minute. Add the paprika, chili powder, salt and pepper. Cook for 1 minute. Stir in vinegar, BBQ sauce, ketchup, mustard and brown sugar. Once combined, stir in the baked beans and cooked bacon.
- Bring to a boil, then turn off the heat. Add desired about of hot sauce and additional seasonings to taste.
- Pour in an baking dish and bake 40-45 minutes, or until bubbly.

I made this for a potluck. Following the recipe closely, making minor substitutions with what I had on hand. I added a couple packages of sliced Oscar Meyer weiners instead of bacon. Everyone loved it. No leftovers.
